Pasta Salmon Salad with Yogurt Dressing
Ingredients
500g pasta shells, cooked wholegrain
150g sugar snap peas, blanched
250g cherry tomatoes, cut in half
1 X 425g can salmon, drained
Dressing:
250ml soya plain yogurt
1 tbsp lemon juice
1 tbsp fresh rosemary, chopped
1 tbsp fresh basil, chopped
1 tsp dried mustard powder
1/2 tsp poppy seeds
1 tbsp chopped fresh parsley
Method
Combine pasta, sugar snap peas, tomatoes and salmon in a large serving bowl. Place dressing ingredients in a screw top jar and shake until well combined. Pour over salad and toss until the ingredients are combined.
